Hey folks,
I love the science and general “nerdery” of coffee culture and people. More so, I love the connections coffee brings to us all because it invites us to do so much with it in the name of community, justice and equality! I try to make that connection to what I’m doing every day at the helm of the roasters and encourage everyone dealing with coffee, anywhere, at any level to feel and act on that mode of inspiration, too. This lends me a romantic perspective while doing the dirtiest of jobs, negotiating all the variables and otherwise sweating it out among the noisy hum and tumble of the machines. It’s not always easy to see roasting as something alchemic and beautiful. The sensory experience in the roastery is intense, though and lends itself to focused multi-tasking to achieve mastery. It’s not glamorous, but it’s honest. Once the coffee comes out of the roaster there’s no way to hide, so all you can do is put your entire self into it and trust in others to know the difference.
I took some photos of our roasting operations. It’s basically a snapshot of the nuts and bolts of what the roasters here do. Hopefully, I was crafty enough to give you glance at why I love it so much and how it relates to the actual drinks you order or prepare out there in the shops or your homes…Enjoy…Cheers…

Just right, sweet beefed up body, take the bite off the acidity but keepin' a snap, evened color and hint of roastiness without killin' the natural awesomeness...
